This delicious fresh meal serves 2 people and takes just 20 minutes to prepare.
Ingredients
100g Buckwheat (Soba) Noodles
200g Fresh Tuna Steak
1 x Carrot
1/2 cup Coriander
1/4 tsp Sesame Seeds
1 cup Fresh Edamame
1 tbsp Extra Virgin Olive Oil
1/2 tbsp Rice Vinegar
1tbsp Maple Syrup
1 tbspTamari
Cooking Directions – 20 minutes
- Bring a large pan of water (no salt) to boil. Add the noodles and boil for approx 4-5 mins (if overcooked they become very soft)
- Next drain the water from the noodles and rinse with cold water until completely cooled.
- Coat the Tuna in sesame seeds.
- Heat a non-stick skillet over medium-high heat. When the pan is hot, sear the tuna for 2-3 minutes, flipping over halfway.
- This may be slightly shorter or longer depending on how thick your Tuna is.
- Mix the olive oil, tamari, rice vinegar, and maple syrup in a large bowl.
- Add the noodles to the bowl and mix well
- Divide the noodles, tuna, edamame, carrot, and cilantro evenly between bowls. Enjoy!
